Tonic and soda do different jobs

Indian tonic adds characteristic bitterness and its own citrus profile. Soda lengthens a drink without supplying the same bitterness. Ginger beer works when ginger should be a main flavour; ginger ale creates a different, often milder direction.

Fever-Tree lists Premium Indian Tonic and a Refreshingly Light version. “Light” and “Zero” are not interchangeable descriptions: read the actual ingredients and nutrition information rather than assuming either means sugar-free.

Recipe: grapefruit and tonic

Combine 50 ml grapefruit juice and 10 ml lime juice in a glass of ice. Add 100 ml tonic and 30 ml soda, then garnish with a thin grapefruit twist. If the combination is too bitter, reduce the tonic and increase the soda.

For a ginger-led variation, replace the tonic with non-alcoholic ginger beer. This deliberately changes the flavour direction; you do not need to add a botanical spirit alternative as well.
