- 80 g strawberries
- 15 ml lime juice
- 10 ml simple syrup if needed
- 120 ml soda

Method
- Wash, hull and finely crush the strawberries.
- Mix with lime and check sweetness.
- Add to a glass of ice and top with soda.
- Stir gently and serve immediately.
Getting the balance right
Very ripe strawberries often need less syrup. Firm, bland berries become sweeter with sugar but not necessarily more flavourful. For a smoother texture, push the purée through a sieve; removing fibre changes the mouthfeel too.

Replace 40 ml soda with orange juice for a strawberry-orange variation. Let frozen strawberries soften slightly before blending; reduce added ice if the base remains partly frozen.

Measure juice, purée and syrup shortly before serving. Add ice and carbonated ingredients when you make the drink. To serve a group, multiply the quantities, but adjust one glass first before mixing the whole pitcher.
