- 70 g blueberries
- 20 ml lemon juice
- 10 ml simple syrup

Method
- Crush blueberries thoroughly or blend briefly.
- Mix with lemon and syrup.
- Strain into a glass of ice.
- Add soda and stir gently.
Getting the balance right
The skins provide colour but can leave solid pieces in the drink. A fine sieve improves texture. Let frozen berries soften slightly so the purée can be measured consistently. Ripe mild berries tolerate more lemon than tart ones.

Use 5 ml lavender syrup and 5 ml simple syrup for a floral version. Keep lavender restrained so the berry remains noticeable. Replacing some soda with apple juice makes the drink fruitier.

Measure juice, purée and syrup shortly before serving. Add ice and carbonated ingredients when you make the drink. To serve a group, multiply the quantities, but adjust one glass first before mixing the whole pitcher.
