Lavender Mocktail: Lemon and Floral Soda
A lavender mocktail works with a small quantity of food-grade lavender syrup.
A lavender mocktail works with a small quantity of food-grade lavender syrup. The floral note should accompany the lemon rather than dominate the drink. Start with a restrained measure and adjust after dilution.
The quantities make one serving. Measure the ingredients before mixing and chill any mixer. Syrups, juices and bottled alternatives vary in sweetness and acidity, so taste the base before topping up.
Ingredients for one serving
- 10 ml food-grade lavender syrup
- 20 ml lemon juice
- 40 ml white grape juice
- 120 ml soda
- Ice
Method
- Stir syrup and juices together in the glass.
- Add ice.
- Pour in soda slowly.
- Mix gently and taste.
Getting the balance right
Lavender syrups vary in strength. Too much can taste soapy; add more of the same unflavoured base rather than trying to fix it with lemon alone. Fragrance oils and decorative flowers are not automatic substitutes for culinary ingredients.
Variation and substitutions
Replace 30 ml grape juice with sieved blueberry purée for a berry version. For a lighter aperitif, omit grape juice and add 20 ml more water.
Preparing several servings
Measure juice, purée and syrup shortly before serving. Add ice and carbonated ingredients when you make the drink. To serve a group, multiply the quantities, but adjust one glass first before mixing the whole pitcher.
Common question
Do I need lavender flowers as garnish?
No. A lemon twist is enough and keeps the ingredient list simple. The syrup already supplies the floral aroma.
