Coconut Mocktail: Creamy Pineapple and Orange Kiss
This creamy coconut mocktail combines pineapple, orange and coconut.
This creamy coconut mocktail combines pineapple, orange and coconut. Unlike a straightforward colada, orange adds a second fruit flavour. Use coconut syrup sparingly because both juices already contribute sweetness.
The quantities make one serving. Measure the ingredients before mixing and chill any mixer. Syrups, juices and bottled alternatives vary in sweetness and acidity, so taste the base before topping up.
Ingredients for one serving
- 60 ml pineapple juice
- 60 ml orange juice
- 40 ml coconut milk
- 10 ml coconut syrup
- Ice
Method
- Stir the coconut milk smooth.
- Shake all ingredients firmly with ice.
- Strain into a tall glass over fresh ice.
- Garnish with a small pineapple wedge.
Getting the balance right
Coconut milk often separates into thicker and thinner layers in the can. Stir it completely before measuring for consistent creaminess. If the drink is too thick, 10–20 ml cold water works better than adding more sweet juice.
Variation and substitutions
Add 5–10 ml lime for a sharper version. Without coconut syrup, use another 10 ml coconut milk; the drink will be less sweet and less intensely flavoured.
Preparing several servings
Measure juice, purée and syrup shortly before serving. Add ice and carbonated ingredients when you make the drink. To serve a group, multiply the quantities, but adjust one glass first before mixing the whole pitcher.
Common question
Can I use dairy cream?
Replace only part of the coconut milk if desired. Cream changes the coconut flavour and makes the recipe no longer plant-based.
