A coconut water mocktail is lighter than a coconut milk drink. The coconut flavour stays subtle while pineapple and lime add definition. Choose unsweetened coconut water if you want control over sweetness.

The quantities make one serving. Measure the ingredients before mixing and chill any mixer. Syrups, juices and bottled alternatives vary in sweetness and acidity, so taste the base before topping up.

Ingredients for one serving

  • 120 ml coconut water
  • 40 ml pineapple juice
  • 15 ml lime juice
  • 40 ml soda
  • Ice

Method

  1. Mix coconut water and juices.
  2. Pour into a glass of ice.
  3. Add soda slowly.

Getting the balance right

Coconut water is not diluted coconut milk: it provides neither its fat nor its creaminess. Do not expect a colada flavour. If the drink feels too thin, reduce soda to 20 ml before adding coconut syrup and changing its character entirely.

Variation and substitutions

Replace pineapple with 30 ml cucumber juice for a less fruity drink. For a softer citrus direction, use 20 ml orange juice instead of lime.
