Lemon Mocktail: A Crisp Sparkling Fizz

A lemon mocktail needs more balance than simply sour juice and water.

Serving inspiration from the ProstZero drink collection: golden citrus fizz

A lemon mocktail needs more balance than simply sour juice and water. A little syrup and peel aroma create a crisp fizz. The ratio is easier to control than with pre-sweetened lemonade.

The quantities make one serving. Measure the ingredients before mixing and chill any mixer. Syrups, juices and bottled alternatives vary in sweetness and acidity, so taste the base before topping up.

Ingredients for one serving

  • 25 ml lemon juice
  • 15 ml simple syrup
  • 150 ml soda
  • Ice
  • Thin lemon peel

Method

  1. Stir lemon juice and syrup together.
  2. Add ice.
  3. Top with soda and mix gently.
  4. Express lemon peel over the drink and add it.

Getting the balance right

Fresh juice supplies acidity while peel contributes aroma. A thick layer of white pith can taste bitter. Cut the peel thinly and avoid grating large quantities into the drink. For gentler acidity, start with 20 ml juice.

Variation and substitutions

Use 10 ml elderflower cordial instead of 15 ml simple syrup for a floral fizz. Replacing 30 ml soda with cooled black tea adds structure and makes it less like straightforward lemonade.

Preparing several servings

Measure juice, purée and syrup shortly before serving. Add ice and carbonated ingredients when you make the drink. To serve a group, multiply the quantities, but adjust one glass first before mixing the whole pitcher.

Common question

Can I use lemon concentrate?

Follow the product’s dilution instructions. Concentrate is not automatically used in the same quantity as freshly squeezed juice.
