Non-Alcoholic Limoncello Spritz: Lemon Recipe and Ratios

Make a non-alcoholic Limoncello Spritz with a citrus aperitif or homemade lemon syrup. Includes separate ratios, substitutions and mixing tips.

Non-Alcoholic Limoncello Spritz: Lemon Recipe and Ratios

A non-alcoholic Limoncello Spritz combines a sweet lemon base, non-alcoholic sparkling wine and sparkling water. Replace the regular limoncello completely. Lemon syrup is usually more concentrated than an aperitif alternative, so the two should not automatically be measured in equal amounts.

Choose your recipe for one glass

Ingredient Citrus aperitif version Lemon syrup version
Non-alcoholic citrus aperitif 50 ml –
Lemon syrup – 20 ml
Fresh lemon juice To taste 15 ml
Non-alcoholic sparkling wine 100 ml 100 ml
Sparkling water 30 ml 45 ml

Fill a wine glass with ice and add the lemon base. Pour in the chilled sparkling ingredients, stir gently once and garnish with lemon peel. Bend the peel over the surface to release its aromatic oils.

Bottled alternative or homemade base?

If you use a syrup, start with the smaller amount in the table. Syrup supplies flavour and concentrated sweetness; it does not behave like a spirit measured pour for pour. A sweet sparkling wine may mean you need even less syrup.

Make a small batch of lemon syrup

Dissolve 50 g sugar in 50 ml hot water. Add three thin strips of washed lemon peel, keeping the bitter white pith to a minimum. Allow the mixture to cool and strain it. Transfer it to a clean closed container, refrigerate and make only what you expect to use promptly.

Add fresh lemon juice when mixing each glass, rather than building all the acidity into the syrup. That gives you more control over the finished spritz. Lemon and vanilla baking extracts are unnecessary here and may contain alcohol.

Variations worth trying

For an herbal finish, lightly press two basil leaves and add them as garnish. For a spicy variation, replace 40 ml of sparkling water with non-alcoholic ginger beer and initially halve the syrup. For a more bitter drink, add 20 ml grapefruit juice and reduce the water accordingly.

These changes affect sweetness as well as flavour. Mix a small trial portion before scaling up for a group, and add the sparkling ingredients only at serving time.

Common questions

Can I make it without sparkling wine?

Replace the wine with sparkling water and start with an additional 20 ml white grape juice. The result is closer to a sparkling lemonade and will have less wine-like structure.

Why is my spritz too sweet?

Syrup, sweet sparkling wine and juice can compound each other. Reduce the syrup before trying to correct everything with more lemon juice.

Can lemon juice replace limoncello on its own?

It provides acidity, but little sweetness or peel aroma. Combining syrup, fresh juice and a lemon twist covers those different functions more effectively.
