Lychee Mocktail: Lime and Delicate Fruit

A lychee mocktail tastes gently floral and fruity.

Serving inspiration from the ProstZero drink collection: floral sunset fizz

A lychee mocktail tastes gently floral and fruity. Canned lychees often come in sweet syrup, so measure fruit and packing liquid separately. Fresh lime prevents an overly sweet mixture.

The quantities make one serving. Measure the ingredients before mixing and chill any mixer. Syrups, juices and bottled alternatives vary in sweetness and acidity, so taste the base before topping up.

Ingredients for one serving

  • 4 drained lychees
  • 20 ml syrup from the can
  • 20 ml lime juice
  • 120 ml soda
  • Ice

Method

  1. Crush or briefly blend the lychees.
  2. Stir with syrup and lime.
  3. Strain if desired and pour over ice.
  4. Add soda and mix gently.

Getting the balance right

The flesh can be fibrous. A fine sieve makes the drink smoother, while unstrained purée keeps more body. Fresh lychees lack the packing syrup’s sweetness; replace it with water and adjust with a little simple syrup.

Variation and substitutions

Two cucumber slices add freshness. For more fruit, replace 30 ml soda with white grape juice and initially use only 10 ml packing syrup.

Preparing several servings

Measure juice, purée and syrup shortly before serving. Add ice and carbonated ingredients when you make the drink. To serve a group, multiply the quantities, but adjust one glass first before mixing the whole pitcher.

Common question

Can I use lychee juice?

Yes. Start with 80 ml juice instead of fruit and syrup, then reassess sweetness and dilution.
