A mango mocktail gets its texture from fruit purée. Lime brightens sweet mango while soda provides a lighter finish. Dilute the purée before topping up so it mixes evenly.

The quantities make one serving. Measure the ingredients before mixing and chill any mixer. Syrups, juices and bottled alternatives vary in sweetness and acidity, so taste the base before topping up.

Ingredients for one serving

  • 60 g mango purée
  • 20 ml lime juice
  • 40 ml cold water
  • 100 ml soda
  • Ice

Method

  1. Stir purée smooth with lime and water.
  2. Pour into a glass of ice.
  3. Add soda slowly.
  4. Gently lift the mixture from the bottom with a spoon.

Getting the balance right

Mango purée ranges from thick to almost juice-like, so the water quantity is a starting point. If purée stays at the bottom, loosen the base more before the next glass. If mango flavour is weak, reduce soda rather than automatically adding syrup.

Variation and substitutions

Replace 20 ml water with passion fruit nectar for a tropical variation. For a creamy version, omit soda and blend in 60 ml coconut milk with a little ice.

Preparing several servings

Measure juice, purée and syrup shortly before serving. Add ice and carbonated ingredients when you make the drink. To serve a group, multiply the quantities, but adjust one glass first before mixing the whole pitcher.
