Method
- Gently press mint leaves with syrup in the glass.
- Add tea.
- Fill with crushed ice and stir briefly.
- Mound a little more ice on top and garnish with mint.
Getting the balance right
Crushed ice melts quickly and dilutes the small liquid volume, so the tea base can start relatively strong. Use more tea rather than a very long steep to avoid harsh bitterness. Place the mint garnish near the drinking edge so its aroma is noticeable.
Variation and substitutions
Replace 40 ml tea with a non-alcoholic whiskey alternative if desired, reducing syrup for a sweetened base. Mild green tea gives a fresher, less tannic variation.

Measure juice, purée and syrup shortly before serving. Add ice and carbonated ingredients when you make the drink. To serve a group, multiply the quantities, but adjust one glass first before mixing the whole pitcher.
