The quantities make one serving. Measure the ingredients before mixing and chill any mixer. Syrups, juices and bottled alternatives vary in sweetness and acidity, so taste the base before topping up.

Ingredients for one serving

  • 140 ml non-alcoholic ginger beer
  • 20 ml lime juice
  • 30 ml cucumber juice or cold water
  • Ice
  • Lime slice and mint

Method

  1. Fill a highball glass or suitable mug with ice.
  2. Add lime and cucumber juices.
  3. Pour in ginger beer slowly and stir once.
  4. Garnish with lime and a small mint sprig.

Getting the balance right
