A Paloma mocktail combines grapefruit and lime with a small salty accent. This version uses juice and soda instead of grapefruit soda so sweetness can be adjusted separately.

The quantities make one serving. Measure the ingredients before mixing and chill any mixer. Syrups, juices and bottled alternatives vary in sweetness and acidity, so taste the base before topping up.

Ingredients for one serving

  • 80 ml grapefruit juice
  • 15 ml lime juice
  • 10 ml agave syrup
  • 100 ml soda
  • Ice
  • Salt for half the rim

Method

  1. Moisten half the rim with lime and salt lightly.
  2. Stir juices and agave in the glass.
  3. Add ice and soda.
  4. Mix gently and serve with grapefruit.

Getting the balance right

A salt rim is an accent rather than a thick crust. Taste from the unsalted side before changing sweetness. Agave dissolves more easily when mixed into the juices first. Particularly sweet grapefruit may need less syrup.

Variation and substitutions

Replace 40 ml soda with a non-alcoholic tequila alternative if desired. With bottled grapefruit soda, initially omit agave and reduce the juice until the balance works.

Measure juice, purée and syrup shortly before serving. Add ice and carbonated ingredients when you make the drink. To serve a group, multiply the quantities, but adjust one glass first before mixing the whole pitcher.
