A pineapple mocktail does not have to be creamy. Lime and soda make a lighter fizz that keeps pineapple at the centre. A small ginger addition is optional and changes the drink noticeably.
The quantities make one serving. Measure the ingredients before mixing and chill any mixer. Syrups, juices and bottled alternatives vary in sweetness and acidity, so taste the base before topping up.
Ingredients for one serving
- 100 ml pineapple juice
- 20 ml lime juice
- 80 ml soda
- Ice
- Optional 1 thin ginger slice
Method
- Shake pineapple and lime briefly with ice.
- Strain into a glass over fresh ice.
- Add soda carefully.
- Garnish with ginger if desired.
Getting the balance right
Pineapple juice can foam when shaken. Leave room in the glass before adding soda. Sweet juice needs more acidity than a tart version; start with 15 ml lime when using an unfamiliar juice and increase if needed.
Variation and substitutions
For a mint variation, lightly press two leaves and add them in the glass. For a ginger fizz, replace 40 ml soda with non-alcoholic ginger beer. Check sweetness again before adding anything else.
Preparing several servings
Measure juice, purée and syrup shortly before serving. Add ice and carbonated ingredients when you make the drink. To serve a group, multiply the quantities, but adjust one glass first before mixing the whole pitcher.

Can I use fresh pineapple?
Yes. Blend it and strain out coarse fibres. The result is thicker, so add water if needed.
