Ingredients for one serving

  • 90 ml grapefruit juice
  • 10 ml lime juice
  • 10 ml simple syrup
  • 100 ml soda
  • Ice
  • Grapefruit peel

Method

  1. Stir juices and syrup in the glass.
  2. Add ice.
  3. Pour in soda slowly.
  4. Express grapefruit peel over the drink and add it.

Getting the balance right

Grapefruit is both acidic and bitter. Sugar alone does not control both properties. Taste the juice first; if it is very bitter, replace 20 ml with orange juice. This changes the fruit balance instead of heavily sweetening a bitter drink.
