Homemade Mocktail Syrup: Simple Ratios and Flavours
Make simple syrup for mocktails using an equal-weight ratio. Includes lemon and ginger variations, measuring tips and practical storage guidance.
Homemade mocktail syrup makes it easier to sweeten cold drinks evenly. The sugar is dissolved before mixing, so it does not leave grains at the bottom of the glass. Start with a small batch of sugar and water.
Basic equal-weight recipe
- 100 g sugar
- 100 g water
Warm the water gently and stir in the sugar until dissolved. There is no need for prolonged boiling. Cool the mixture and transfer it to a clean container with a lid. The 1:1 ratio describes weight, not a guaranteed final volume of 200 ml.
Label the container with its contents and preparation date. Refrigerate it and make small quantities you expect to use promptly. A universal shelf-life guarantee is not appropriate without controlled preparation and storage.
Two simple flavour variations
Lemon: while the syrup cools, add three thin strips of washed lemon peel with little white pith. Taste and strain once the aroma suits you. Add fresh lemon juice separately in the cocktail so acidity and sweetness remain independently adjustable.
Ginger: infuse a few thin slices of fresh ginger in the warm mixture, then strain. Start with a modest quantity and increase it in the next batch rather than making the first attempt overwhelmingly hot.
How much syrup to use
For a sparkling drink containing 150–200 ml total liquid, start with 10 ml syrup. Tart lemon may need more, while nectar or sweet soda may need less or none. Measure rather than pouring freely from the bottle.
A denser syrup containing more sugar is not interchangeable measure for measure. Adjust quantities when using a different concentration and record the change. Flavoured syrup also does not automatically replace fruit juice or a spirit alternative.

Can I use honey?
You can dilute honey with water, but its flavour and sweetness differ. It is not a sugar-free substitute.
