A Hugo mocktail combines elderflower cordial, mint and a sparkling base. Use non-alcoholic sparkling wine or make a lighter version with sparkling water. The right cordial quantity depends on the sweetness of everything else.

The quantities make one serving. Measure the ingredients before mixing and chill any mixer. Syrups, juices and bottled alternatives vary in sweetness and acidity, so taste the base before topping up.

Ingredients for one serving

  • 15 ml elderflower cordial
  • 100 ml non-alcoholic sparkling wine
  • 50 ml sparkling water
  • 10 ml lime juice
  • 4 mint leaves
  • Ice and a lime slice

Method

  1. Lightly press the mint and place it in the glass.
  2. Add cordial and lime juice, then fill with ice.
  3. Slowly add sparkling wine and sparkling water.
  4. Stir gently and garnish with lime.

Getting the balance right

Elderflower cordial is different from elderflower liqueur. Use a syrup or cordial with the appropriate alcohol statement for this recipe. The floral note should remain clear without making the drink sticky. Adjust concentrated products in 5 ml increments.

Variation and substitutions

Without sparkling wine, use 150 ml sparkling water in total. For a cucumber variation, add two thin slices and halve the mint. Avoid combining several strongly aromatic herbs so the elderflower remains clear.

Preparing several servings

Measure juice, purée and syrup shortly before serving. Add ice and carbonated ingredients when you make the drink. To serve a group, multiply the quantities, but adjust one glass first before mixing the whole pitcher.
