A raspberry mocktail brings vivid colour and fresh acidity to the glass. Sieved raspberries give a smoother texture than roughly crushed fruit full of seeds. Soda keeps the mixture light.

The quantities make one serving. Measure the ingredients before mixing and chill any mixer. Syrups, juices and bottled alternatives vary in sweetness and acidity, so taste the base before topping up.

Ingredients for one serving

  • 60 g raspberries
  • 15 ml lemon juice
  • 10 ml simple syrup
  • 130 ml soda
  • Ice

Method

  1. Crush raspberries and push through a fine sieve.
  2. Stir the purée with lemon and syrup.
  3. Pour into a glass of ice.
  4. Add soda slowly and mix gently.

Getting the balance right

Raspberry acidity varies considerably. Taste the purée before adding lemon and start with 10 ml for very tart fruit. Sieving reduces the yield slightly but prevents a thick layer of seeds at the bottom. Avoid forcing hard seeds through the mesh.

Variation and substitutions

Replace simple syrup with 10 ml elderflower cordial for a floral version. For extra fruit, replace 30 ml soda with apple juice and start with only 5 ml syrup.

Preparing several servings

Measure juice, purée and syrup shortly before serving. Add ice and carbonated ingredients when you make the drink. To serve a group, multiply the quantities, but adjust one glass first before mixing the whole pitcher.
